There are meals you remember because they’re flashy. Others you remember because they’re simple—but perfect. This meal, a humble bangers and mash, was the latter.
After a sun-drenched afternoon spent poolside and meandering through Severna Park, we landed at Brian Boru, an Irish pub with live music, warm lighting, and just enough bustle to feel alive without feeling overwhelmed. The air hummed with fiddles and banter. It smelled like memory. And I ordered the bangers and mash, a generous portion that could easily satisfy a hearty appetite.
Let’s break this harmony down.
Mashed Potatoes
Creamy. Silky, but not overly processed. These are enough small details to remind you that this was made by hand, not by machine. Moist, never dry. They held their shape without being heavy, seasoned with intention—not flair. Some restaurants try too hard with their mashed potatoes. These didn’t need to prove anything. I washed it all down with a cold Magners Original Irish Cider, crisp and refreshing with just enough bite to cut through the richness. The kind of drink that makes you sigh contentedly after each sip.
Atmosphere Check
Brian Boru doesn’t try to be fancy. It tries to be real—and succeeds. An authentic neighborhood pub that feels like you’ve always known it. Comfortable seats, friendly faces, and live Irish music —a lively mix of fiddles, bodhráns, and soulful vocals —that pulled me straight into Ren Faire nostalgia. (Seriously, I almost grabbed a cloak.)
